First, if you want to have breakfast
and lunch on a flight under eight hours, you'll obviously be spending nearly the entire flight eating. I see your point about choice, but I think that having only one main meal (plus lighter snack-type options, I assume) on a <8 hour flight is sufficient. Some, like you, will eat breakfast in the lounge. Others will eschew that option because it's an 8 a.m. flight and they'd rather sleep a bit later and eat breakfast on the plane. I wouldn't expect any airline to cater both a full breakfast and lunch on a flight of that length. I'd feel differently, say, about the 16+ hour DOH-LAX 739 which I'm taking next week. I guess we just see it differently.
