Not to mention, the Chase airport lounges are known to partner with local food businesses. Instead of appealing to the same gullets year-round, why not vary it up, while also showing off more of the destination?
Sure, but it's obvious they struggle to do many things at the same time. Like the food on the buffet is rarely hot and fresh. Their efforts at ethnic food have generally failed. Have you had their breakfast bao? Made-to-order food at an airport lounge is not a proven concept. Chase keeps "proving" it's a challenge. I'd pair the made-to-order menu and try to do a couple dishes well -- consistently.
