I will say it's best to get the basics down first. Like the Sapphire lounges have a signature burger. I've had them at a few different locations (including PHL). Sometimes they're restaurant-quality and you feel really good about stopping by the lounge to eat, and sometimes they're terrible and you wonder why you're there. Make sure the burger and fries are always served tasty and hot, and then think about adding other foods.
There's not just one set of taste buds out there.
Not to mention, the Chase airport lounges are known to partner with local food businesses. Instead of appealing to the same gullets year-round, why not vary it up, while also showing off more of the destination?
