Your photo above reminds me of one of my pet peeves. Most of us who choose this option like putting cheese on the crackers, rather than just eating chunks of it, but the AC cheese plates are pre-prepped as shown (with a plastic cover the FA remove when serving). I'm not sure if they have access to more crackers other than taking from another prepped portion.
Anyhow, my solution is to bring an extra supply of crackers with me. All other carriers I've been on where they served cheese have a reasonable proportion of cracker to cheese.
