I don't know I'd bother with business on the E190, economy on those planes is pretty decent. The 737 though I'd go with business. It should actually be a 737-800, not a 787, they use those quite a lot on regional routes. There is a lounge at LVI, so depending on how long you need to spend in the airport, that could actually sway me to business either way.

VS doesn't have variable award pricing as far as I know, it should be the same price dependent on availability.

With AF I'm unsure what the increased pricing is, but seems to double from June onward.
