This is an excellent point. Had similar experiences in Dec.
6am - AS and AM Gardens rammed. Waitlist for dining at AM Gardens; complete chaos.
1pm - AM Gardens quiet, can sit anywhere, viewing the gardens is actually peaceful and tranquil. Moved to AS where the service was attentive and relaxed; no restroom lineups or anything - a very relaxing place to be pre-flight also.
