In general, most of the hotels I'd put in this category are actually on the lower end of Hyatt's scale, because it's easier to go above and beyond when baseline expectations are lower, and I'm an uncomplicated solo traveler so there's less room to impress me with things like giving an entire large family breakfast. Two that come to mind in this category are:
al and may not be broadly applicable, but I've stayed here several times since I often pass through YYC on my way to the Canadian Rockies and I'll stay near the airport for a night if I'm arriving on a late flight. The staff are nice and they always gave me an upgraded room, but now as a repeat guest I consistently get a suite (despite no requirement for Hyatt Place to upgrade at all), and the last time I stayed a few months ago they even left some snacks as a welcome gift. While it's not a physically perfect hotel (the location is a little awkward and in my latest stay the shower took several minutes to heat up), I get the sense of genuine effort, in the spirit of this thread.

Sometimes I'm stubborn to leave my 4 or 5 star properties but they absolutely can make solid sense.
Even I'll admit I will do a Hyatt House when it comes down to a new build and
a location when I have a meeting that will save me some travel time in the AM
