Apparently they monitor what comes back off the flight that is uneaten and unused and it is supposed to help for planning future menus. For example if everyone is ordering the gnudi but not eating it and sending it back, they monitor that and hopefully change or remove it from the menu in the future. A FA and UA management told me that before.
This can’t be true! Or the usually vile/occasionally excellent Short Rib would not have lasted a decade or more!
