If it is really ricotta gnudi, they are usually very light. It's an easy to make home recipe; ricotta, a bit of flour, some good parmesan. Egg yolk optional. Not like a heavier potato gnocchi.
I was afraid United's execution would be wrong and that garlic sauce looked quite thick.

I've enjoyed the Gnudi several times this month. As the user describes above, I find it light and refreshing; not too heavy at all. I tried it from LAX-NRT; IAH-NRT; SFO-NRT and in premium plus from SFO-NRT. I add the red pepper to give it a slight kick - not bad at all. Enjoy!
Good to know! Thanks! With the sauce it was hard to make of it. Red pepper flakes sound perfect!
