I first saw china caviar at a Chicago seafood restaurant and was floored. I think of china stuff as lower in price so I had sticker shock seeing the china caviar costing similar to other caviar. As much as I enjoy my rare times for eating caviar, I have a boomer preference for nice places that serve caviar. It’s like wine - I trust the restaurant and expect them to know their suppliers.
