I have been through Lima airport once and it was last March/April time.

I tend to have a 2-hour rule in getting to Airport and flight departure time that always serves me well but sometimes I am flexible with that if it's a very early morning flight I will make sure I'm at security point 1.5-hours (I need to also mention that I never take checked luggage or need a boarding pass - always have a mobile one, so this comes into it too).

Lima I was flying to Colombia so it was an international flight and I was there 2-hours before and made it through comfortably - I even had time to have a couple of large frozen margaritas at the TGI Friday before boarding.

The thing you need to watch out for with Lima airport is that if you are staying somewhere like Miaflores, it's the traffic that's really bad. I could see a lot of missed flights due to it. I was over an hour in an Uber, either way, once very late at night and then returning around lunch time and the time was the same (over an hour) - I would seriously factor in 1.5-hours travel time to the Airport if you're staying outside of Lima and down the coast. That would be more important than getting through security.
