There are always vegetarian options on the a la carte menu for both JAL and ANA. You can find them here:

You will always be able to order anything on the a la carte menu regardless what you've got for the main meal.

I believe ANA has air nozzles. In any event, I'm more concerned about warm cabins than individual nozzles. We can always put on jackets and blankets, but it's harder to deal with warmth. How's the general temperature?
ANA has air nozzles, JAL does not. But I think JAL keeps the A350 cabin relatively cool (at least to me).
