Your understanding is mostly correct, but I thought that ANA doesn't have air nozzles. (I'm not 100% sure on that, though.) JAL seats have a lot more storage which comes in handy. The seat walls are lower on ANA and have almost a one-inch gap between panels, so if you like privacy the JAL seats are better. You mentioned couple seats. On ANA the couple seats are in alternating rows and face backwards. While the couple seats on JAL are not as close together, they still work fine and you can converse easily with your seatmate.

JAL's A350 has better air pressure and humidity than the older 777, which some people say makes a big difference. Personally I have never felt any difference.
