They will always count towards the year the activity took place (checkout date), not the year they post. The same is also true for MQDs from flights (scheduled flight departure date), Amex purchases, etc. If you look at your Skymiles activity, each posting has both a "Activity" date listed under posting and a "Post" date in the details. They do not have to be the same. The default sort in listings is by activity date, but you can change it to post date in the "Sort & Filter" options. Here's an example of a late posting Amex MQD Boost from last year that posted on Jan 3rd, but counted towards 2024 MQDs because of the Dec 31, 2024 activity date which is when the Amex spend actually occurred.
