It's not that they no longer do breakfast breads, it just that what you get varies by distance band and caterer. If you just had an empty plate with butter than there was a miscater or the bread basket didn't make it around if the breads were boarded. Flights 900-1,299 miles get a cold pre-plated item like a grain loaf, glazed scones, or fig bar (aside from the salmon platter that always gets a bagel regardless of length) and flights 1,300 miles and over get the warmed bread basket.
The butter pat is probably applicable less than half the time on the short band (for most people at least), but for consistency purposes and to make the tray setup more efficient and reliable,.. But sometimes it's funny.
These catering concepts are very intriguing and complex. Would serving a real premium meal be too complicated?
