Should I try to book two one way trips? Otherwise I’d need to wait 3 weeks from the outbound seats being open for booking before I can book as a return trip?

Thursday 17 Dec 2026 will be in the peak peak time for flights to NZ & AU. Are 1000's of NZers and Aussie's in UK who go back home for Christmas - New Years. And back on Friday 8 Jan 2027 so to go to work on Monday. At that time of year all airlines to/from NZ AU are expecting to sell all seats for very good money. Reality.

Air NZ are notorious for not releasing awards seats to ff partners.
Some Asian Slyteam airlines fly to NZ (and AU)Could try for AU with a cash ticket AU<--->NZ. Do not need to fly the same route out and back. Suggest book as one ways.
AKL is not the only airport in NZ. Also try for CHC
USA does not have the concept of transit: full entry required.
