I am going to be in the same predicament next year when am still UA Gold but also AC 25K for 2026, and since I will likely fly way more AC than UA next year, I am curious as to what the best strategy is (though will only try to accrue on one programme i.e. AC):

Yes, you should be able to get into all *A lounges by showing your *G (e.g. UA Gold) status, even if that status is not shown on your boarding pass.
For baggage allowance or boarding group, I believe the relevant status must be on the boarding pass to get the benefit, so you have to change it at check-in or at the gate, respecitvely.
