José Andrés’ Stuffed Piquillo Peppers

really liked this meal. The flavors are well balanced and it was perfectly portioned. The lemon mousse cake was also solid.
The best description I can make of the flavor: the ricotta/mushroom tastes kind of like a thick and tangy mushroom soup. The tomato sauce is like a fresh cream of tomato soup. Mixing the two with the rice and bits of pepper made a great blend of flavors.
For our mushroom adverse friends, they’re chopped and blended into the ricotta. You won’t like this if you don’t like mushroom flavor. OTOH, you’ll be fine if you don’t like shrooms because of the the texture.
