There is another thread which lists the 787 aircraft that have been refitted to date. Definitely more than 1. The thread title has [787 retrofit] in the title. Look for the wiki at the top and it has the info.

Secondly I've used an RU to get from PE to J on the refurb and then paid whatever amount to get the BP Luxe seat. So it's totally doable.

I feel like if you buy business then to get to BP luxe and pay the extra feels like the airline is nickel and diming you. But if you use the RU to go PE to J then I'm actually ok paying for BP luxe.
I had a day flight from Perth to Auckland. Loved it. So great to look out the window again in a normal manner. Loved the space.

I'm yet to fly the regular business class seat. My aircraft got swapped out to a nonrefurb aircraft so I haven't tried that seat yet. But I think you should go try luxe at least once. And $210 is as cheap as it gets. It's more expensive on other routes.
