Because the vast majority of people don't want to be on a plane between 11 PM and 4 AM. There are also dozens of other operational constraints (certain airports close overnight, TSA staffing is also an issue, all ground crew - from check-in agents to gate agents to baggage handlers - would have to be willing to change their shift times, creating entirely new schedules and selling them on the basis of a presumably transient issue, ...).
