I would think it would be pretty simple. It's not unusual for an establishment (especially restaurant) to have a sign "We only take X, Y or Z) and that can be cash and/or check or only MC or VISA or cash . OR now in some places "Completely Cashless" I also have to further note that as margins for various products, services get squeezed with high costs and/or tariffs, you are going to absolutely see more differentiation in payment options (or additional fees if used)
