We had the same menu out of YYZ the other day.
Picked the trout. For once turned out not to be overcooked to death. Asparagus was still on the green side.
This said, my bet is, we were lucky to have an SD who handled the food properly, not leaving it in the oven longer than it's designed for. Which in my experience is pretty much the exception.
So my thought is, nothing to do with the specific menu. Also, same menu, but from YUL vs. YYZ, different catering, could be quite different too.
