In Tokyo, there are so many Michelin starred high-end restaurants but I feel it is so expensive and the value is not there. You are mainly paying for the ambience.
In contrast, in Sapporo, so many eateries at Nijo market offer fresh local fare and are great value.

Fukuoka is also known for its motsunabe, although I know offal isn't everyone's thing. I just picked a place near the station that had a non smoking area, but the stench of cigarettes coming from the smoking area got unbearable for me. I want to try it again another day but this time I'll have to look for a fully non smoking restaurant if one is available. I wasn't a fan of the Hakata ramen though, but it's definitely a difference in taste as I'm more of a Hokkaido miso ramen person. I know it exists but didn't have a chance to go to the Yatai area as a remnant of a typhoon was passing through during my stay.
If you're down in Kagoshima their specialty is the Kagoshima Berkshire pork dishes.
