In Tokyo, there are so many Michelin starred high-end restaurants but I feel it is so expensive and the value is not there. You are mainly paying for the ambience.

In contrast, in Sapporo, so many eateries at Nijo market offer fresh local fare and are great value.
In Nagasaki, you'll probably want to focus on local cuisine such as sara udon and Nagasaki champon, which can be found in Chinatown, where I'd recommend Kozanro. Another popular champon restaurant is Shikairo, which is across the street from the ANA Crowne Plaza Nagasaki Gloverhill. Another option is Dejima Wharf, located directly on the waterfront, offering a variety of Japanese, Chinese, and Western restaurants. It's a lovely location with a harbor view.
