You will need a Stopover (as defined by the specific airline, often over 24 hours) not a connection. If its not officially a stopover you may find the airline will NOT "short check" your bags to the intermediate airport. OR as already suggested, having to change airports will do the trick. You will also (naturally) have to be eligible to enter the third country (even though you plan not to go there) The airline will refuse travel if you are ineligible. And finally, this had better be a one way trip. You can't do what you are planning THEN get on a flight back to point of origin from the intermediate stop later. All flights after the one you intentionally miss will be cancelled.
