Double check if overland is allowed and if not get a visa on the double to be sure. Or ditch the overland journey in China mainland and buy a Peking-Taipe ticket. If overland is allowed you probably are fine due to the Shenzen-Taipe ticket flying you out of China.
What you wrote used to be the case but they updated (and upgraded) the rules effective January of this year, I believe, to be a lot more relaxed.
