Guajillo Roasted Chicken

Guajillo-glazed chicken breast with an ancient grain and black bean stew, grilled zucchini, and enchilada sauce, topped with Cotija cheese.

The black bean stew marinade is what really made this dish a winner for me. Great flavor, decent spice and a bit of that tasty Cotija cheese. The hummus/bean dip made a nice accompaniment, though as always the toast was so hard I feared dental damage. Dessert was a chocolate mousse.

Overall, one of the better meals I've been served of late on Alaska.
