I live in PHX, and I promise I see absolutely ZERO difference in connecting between LAX, SFO, and SEA when getting to China, Korea, Japan, or any other east-Asian country. And I know many, many others who are like me.
More people care than you might think. I think lots of people who will avoid using NYC airports unless they have the misfortune to actually live in or visit NYC because they are so delay prone. LAX has a bad reputation for its CBP facilities and SEA have new facilities.
