At least on most international flights I enter the majority of flyers still eat United meals - in all cabins - so I would suspect at worst that would indictate quality is either acceptable or poor. Or maybe humans are so incapable of withholding hunger for 6 to 14 hours that they resort to eating beyond horrific food...

I have a friend who'd eat almost anything that was "free" and enjoy it. He once passed along a big client to me, and I later told him that I would cut him a nice commission on a big sale that I made to this client. He said, "no, just buy me a nice dinner." Well, when the time came for the dinner, I told him we should go to Mastro's or something similar. No, he wanted to go to one of those cheap Chinese buffet places. It was his choice, so I had to make the best of it, and I didn't like any of the food on the buffett - but I had to pretend that I did.
