2) Yes, Sunday is always off-peak all day across UK rail. Any off-peak (not Advance) ticket is valid on any train that day, subject to any specified route restrictions.
3) Depends what time of year and what the weather’s like. If it’s nice then may well be busy, but probably not full and you should get a seat. Trains out of London on weekend mornings tend to be busier as people head off for day trips. It’s a bit more dispersed on the return.

Here's an update regarding purchasing the tickets (from the USA). I bought them on the Southeastern website - fine. I figured I might as well register, as I could then load the tix onto the app. It actually remembered me from a 2019 trip, so no registration required. I printed the tix (good thing) and then installed the app. It would not recognize my login. I then attempted to register directly on the app. On the country pulldown menu, scroll down from United Kingdom was inhibited. And that is likely the issue. I'll try again when I'm in the UK, as it would be handy to have the tix on the app, but at least I printed them with the QR code.
