The point here was rebooking options will be more abundant, period. More flights will exist, whether on 30 Dec or 31 Dec from PHL or surrounding airports than will be available from DFW. Simply look at the AA schedule from the airports in the regions in question. More flights exist. PHL is an intense focus for AA's international routing.

It's a wild card either way of course. No guarantees, but with the two choices at hand, the PHL option has better statistical odds.
If the OP's TATL were to get cancelled for non-weather reasons, I think that she would be fine out of PHL or DFW. Remember that -- unlike PHL -- DFW is also served by AY and IB. And BA usually serves DFW, too. The bigger problem would be a weather cancellation, which would affect lots of flights, not just the OP's. And in late December, a weather cancellation is more likely to occur in PHL, not DFW.

Edited to add: It looks like IB operates DFW-MAD on December 30, but not December 31. AY operates DFW-HEL on December 31.
