For Nobu, there's a Nobu in another city that's on the list, so that one could be sort of explainable. But the first two are pretty casual sorts of places, and are not on the list at all.
The theory I've seen is that there's a restaurant named "Este" on the list and Chase changed their recognition thing to credit if "Este" appears within the charge (wESTErn bagel, ESTEreo). This would also explain why Nobu restaurants not on the list are getting the credit. I wouldn't eat somewhere relying on this, though, as if this is the reason, it could be fixed at any time.
