A few years ago, I was pleasantly surprised by a Polaris beef dish and enjoyed it even more than the equivalent in QSuite. Not sure if it's the same one this time.
There is more variability in the quality of the tenderloin than the salmon: the worst tenderloin is substantially worse than the worst salmon, but the best tenderloin is substantially better than the best salmon. Are you a gambler?
