If the laptop you want is cheaper at Amazon, and there isn't a promo for Chase/Apple at the point you want to pull the trigger, you might consider using your points to buy Amazon gift card(s) (at 1cpp)...then you'd at least get the full $950 in value, rather than $750.
Apple gift cards also available at the same price (1cpp), if you wanted to buy it directly from them direct for whatever reason (Black Friday sale perhaps).
For the pay-yourself-back option, which I understand is just 1x CPP for Sapphire Preferred now, can it be applied to any transaction purchase regardless of origin, including international? So if I bought the phone at Bic Camera in Japan and paid a cheaper no-tax price, I could PYB my points for that charge after getting home for $950 in value, and then go to a US Apple Store to trade in my iPhone 13, and then use that trade-in credit to discount the new Macbook Air, so in essence I'm double dipping benefits.
Or PYB only for domestic purchases in US$?
