To be fair, we do not know how many pax seeked EC261. Four, most likely a family, went to KRIL. But others may have seeked and after being denied did not pursue further.
There is nothing extraordinary about lav tanks being full when flying an A321 to the Canaries. Happens all the time. Then they close the lavs an hour or so before landing. Keep that in mind when planning your lav visits!
