You are correct that there's not a singular, official page listing all of the restaurants. The best resource I've found is just the open table site here:
https://www.opentable.com/c/chasedining/ and clicking into the city you're interested in (and then from there you can navigate to other cities from the dropdown menu).
For what it's worth, I've been tracking a few cities and have seen a handful of restaurants get added since this was announced, so I'm hopeful that the options will continue to expand. On the other hand, there's really no guarantee if you make a reservation a month or two in advance that a restaurant is going to stay on the list, and I'm wondering if it will reimburse you for restaurants that require pre-payment through OpenTable. I assume it should but given some of the issues so far I don't feel like being the guinea pig.
