They don't seem to have all changed things on the same day, and things don't seem to rotate based on day of the week. Is it as simple as they use something up and switch whenever they run out?

Sliders at YYC are still by far the best food in the MLL network.
My knowledge is dated, but I'm pretty sure each airport runs their own lounges. So YYZ dom and TB will likely be almost identical, and the booze offerings will likely be similar to YOW (because LCBO), but no correlation (beyond "brand standards") with YYC. And I'd expect YVR/YYC/YWG to be similarly independent.

Also, you say "YVR", but I assume you mean "YVR dom". International lounges have different standards, and I'm not sure if YVR TB has a full hot kitchen, which, if my memory is correct, obviously limits what they can do.
