They should be providing a reasonable replacement cost. How much would it cost to buy a similar 3 course meal in a restaurant? There's your starting point.

Honestly the fact that BA is unable (or more likely unwilling) to source any catering whatsoever at NAS is a disgrace. I mean NAS is not a backwater. There are planes in and out of there all the time and the facilities must exist. BA is just not willing to pay for them because they know that 90% of customers are willing to put up with being treated as self loading freight.
