My inbound will be arriving at ICN later today. If I go to the check-in counter at the airport after I arrive, will they allow me to check-in there two days early (or at least compete the docs check and so it unblocks OLCI)?
Definitely stop by; all you're losing is a few minutes of time. Start at the help desk at the end of the check-in desks at ICN first, because the check-in desk may send you there anyway.

Check in 2 days early? No chance.

Complete doc checks? Probably. I've had good service with this kind of situation, though I was D+ or D at the time, so not sure if status is important.

Try to upgrade immediately once there? With AC miles? Probably not to "they'll look at you like you're crazy." With OZ miles, I was told that I couldn't upgrade an OZ flight unless I had paid on OZ's website, so also a no.
