Going one level of detail deeper, your Uber Cash is (supposed to be) used in order of first-expiring funds first. Expiring funds include both the $15 Amex credit, and also Uber One credits that are deposited after each ride/meal. After there are no more expiring credits, the rest of your Uber cash balance is used, and then your selected payment method.
