I missed the part where you mentioned it was a single ticket. As mentioned above, that won't work. Two separate tickets are better, where one ticket takes your wife out mainland China to HKG or a third country, and the second is to Taiwan.

It's kind of like visiting Cuba for US Americans from a third country, which I highly recommend, it's very pretty.
