I think the issue with the Admirals Clubs is that many (most?) of them don’t have proper kitchens and can’t do food prep on site, so the food is always going to be pretty mediocre.
That's definitely one of the challenges... One of the reasons for the staggered rollout of the initial AC food enhancements were the pantry facilities in many of the clubs. Most of them at least now have proper fresh food prep facilities that are appropriate to the current menus, even if they don't have full kitchens.
