SFO-NRT will be lie-flat, but NRT-GUM will be in a recliner. SFO-HNL may be in a recliner but could be lie-flat; HNL-GUM will be lie-flat on a 77W.
Unless you want more BIS or take a long layover in Tokyo (perhaps less convenient if going through NRT), I would go via HNL.
