I just completed a trip to Tokyo on JL55/JL10. I was in seats 2K/2A (window). On both flights, the middle seats were empty and were used as beds for all four of us in the cabin. It seems to me that this is JAL's MO from what I have read on this site and my recent experience and I appreciated it much.
This is just a lucky break you got due to a light load. Usually, one or more of those middle seats will be occupied. Though there is often an open seat or two that can be used temporarily while the CAs make/unmake your bed.
