For Bangkok, 7 nights is a long time to spend in Sukhumvit. I would suggest splitting time between Sukhumvit and riverside, especially for a first stay.

Kacee's right. Try the river area for few nights. Avani, Anantara, even a decent Hilton, though we have done some staycations at the ROSheraton when we lived in Bangkok.

Food is incredible in both provinces though (also along the way in Phang Nga), so you can’t really go wrong with either. Besides food, another reason to visit Phuket old town once is the Sino-Portuguese architecture, but you’ll have seen similar style buildings in Singapore as well.

Since OP has a week in this region, an option could be to arrive into HKT and fly out of KBV (or go further into Hat Yai (HDY), Nakhon …(NST), or down to Trang (TST)). Either by sea over Phang Nga Bay or overland via route 4 is also beautiful, but a long drive (better to have a driver for this). The latter is worthwhile if you also want to get off the beaten path and end up in Patthalung.
Thank you everyone for your valuable feedback!

I've cancelled the Westin and booked us at the Centara Grand Beach. Thank you for this suggestion!

For Bangkok, we are still working on it. For now, we haven't decided whether to split our stay between the riverside and Sukhumvit.
It's interesting, the consensus here is that Sindhorn is not good. YouTube reviews and others seem to praise it. We don't need anything too fancy for Bangkok, just nice, clean and comfortable.
Will continue working on this, though.
