Can you email yourself a new ETR&I from United.com? Since you're only seeing the correct segments online I'm wondering if you got the ETR&I while things were in transition (e.g. new segments had been confirmed but the cancellation for the old segments hadn't been fully processed).

united.com sometimes does weird with displaying segments that aren't in HK status (Holds Konfiirmed [sic]) status so it's possible (though I haven't seen it recently -- also haven't had a UA codeshare on NH ever) that the original flights are lingering in the PNR with a HX, IX , or OX status/action code ("Hold Cancel", "If Holding, Cancel", "Cancel only if requested segment available")
I bought the ticket directly from UA. When I email myself the new ETR&I, it still shows the 4 segments and shows the original ticketing date although there is a new e-ticket number which matches the e-ticket number that UA sent when they sent the confirmation of the flight changes (before sending the actual e-ticket receipt a few minutes later).

I used the ANA confirmation code on their website and things look OK there for the itinerary with just the new flight segments showing confirmed.

The fare I paid for the changed ticket is still available. I'm debating whether I should just cancel this ticket outright and book a new/separate reservation with the credit to avoid any issues later when I actually fly. Thoughts?
