I've seen FAs on delayed flights have the option to work the flight or not due to duty hour limitations. There's apparently one threshold where they can opt out and a second higher duty hour threshold after which they cannot work a flight. I've also seen FAs be swapped to another flight when they're apparently obligated to work or legal to work only a shorter flight.

I don't know whether pilots have similar rules.
