I also saw on another forum someone bought a gc online at a Resy restaurant and paid via PayPal since that was their only available option and they got the credit. I think Amex does normally say that using third party payment platforms may cause you not to get the credit and thus I've never tried it myself, but I have seen reports of it working without issue.
