Both airlines leave DFW at night, arrive in CEB around 11am, and require only one 3-hour layover.

The transpacific flight is either B787 (BR) or A350 (CX) which I prefer over planes with an aluminum fuselage.
I’d just choose based on price- both are going to be solid.
Benefits of CX: better IFE, better lounges (in both DFW and HKG)
Benefits of BR: more consistently good food (if you like Chinese cuisine), more consistently good service, no need to reclear security at TPE
