For the first part, no. There is no default. Assuming you get past the "reserve" button (I've had some issues with "Session Timeout Warning" messages and such), some say "pay at property", some say "pay deposit", some say "pay now". Some properties have more than one of those.
The second part is right. I've now found some that are "pay now" and they do specify "eligible for a United® Hotels statement credit". You just have to drill down 3 levels to get to that page.
